Dimer dalna (egg curry)

Ingredients:
  • 4 eggs
  • 2 potatoes, 2 red onions, 1 tomato
  • ginger paste, garlic paste
  • cumin seeds, dry red chillis, bay leaves(tej pata)
  • turmeric powder(haldi), red chilli powder, salt, sugar, oil, garam masala powder
Process:

Peel the potatoes and grate the onions.
Put the eggs and potatoes in water and make it boil for 10 minutes.
Then, cool the eggs and peel them off.
Softly scratch the boiled eggs with a knife. Scratch on 3-4 places.
Cut the tomato into small pieces.
Heat 6-7 tablespoons of oil in a big saucepan or stockpot. Add 2-3 bay leaves, a few dry chillis and 1 tablespoon of cumin seeds into hot oil.
Then, put the eggs on the oil, and slightly fry them (take care; this might spill hot oil on you.)
Put the boiled potatoes and grated onions into the pan. Add one and half tablespoon of ginger paste and one tablespoon of garlic paste, sufficient amount of salt and little bit of turmeric.
Stir for 6-7 minutes, then add the tomato.
Stir for 3-4 minutes more, then add about 3 cups of water.
Add sugar and chilli powder and wait for the water to boil.
When the water starts boiling, add one teaspoon-full of "garam masala" and stop the heat.

Serve hot.
